Leek and Potato Soup

Cooking time : 30 minutes

INGREDIENTS

Vegetable oil
5 Onions
14 large leeks
3K potatoes
5 litres vegetable stock
Thyme, salt and pepper

METHOD
1. Roughly chop onions and fry in oil (in the soup pan). Fry for around 10 minutes (until onions softened and starting to go brown)

2. Roughly chop leeks and cube unpeeled potatoes. Add to pan.

3. Add stock, salt, pepper and thyme to taste. Stir and bring to boil (takes around 20 minutes).

4. When soup starts to boil, simmer until potatoes soft (around 10 minutes).

5. Blitz to a smooth consistency
