Vegetable Pasta Bake

INGREDIENTS
2.25K dried pasta
12 x 400g tins chopped tomatoes
12 large onions (diced)
12 peppers (diced)
12 courgettes (halved lengthways then sliced)
20 cloves garlic (crushed or finely chopped)
Mixed Herbs
salt and pepper
1 pack grated cheese for topping

METHOD
1. Cook the pasta in a large pan of salted, boiling water

2. Mix together the onions, peppers, courgettes, garlic and herbs, with a little oil. Oven roast for 20 minutes in a preheated oven at gas mark 8 (around 200C).

3. Stir in the tomatoes, season and add pasta. Cook for a further 30 minutes.

4. Sprinkle over grated cheese. Cook for a further 5 minutes and serve.
